1 teaspoon of vanilla extract<br />
1 teaspoon of baking soda</p>
<p>Preheat oven to 350°. Combine bananas, sugar, vanilla extract and eggs in a large bowl and beat w/ a mixer until well blended. In another bowl, combine flour, salt, and baking soda and stir. Add flour mixture to banana mixture and beat well. Spoon batter into a 9&#215;5 non-stick loaf pan and bake for 45 minutes, or until a wooden toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from the pan.</p>
