@Fireyheart: No, you can leave out the marshmallow completely. I will say that with the marshmallow the cookies get better with time. They get fluffier and taste better.

I used to stack shelves in a supermarket. For ages I wondered what marshmallow creme was used for (obviously not enough to bother looking it up)
Actually, it was in the spreads section, with the jam, honey etc.
Personally I thought it would taste very strange on toast O_o

Anywhoo, awesome cookies. If I had seen this recipe last week I would have made some for our work baking day
