Recipe: Soft Banana Bread
3 mashed bananas
2 cups of flour
1 cup of sugar
1/4 cup of butter (softenend)
2 eggs
1/2 teaspoon of salt
1 teaspoon of vanilla extract
1 teaspoon of baking soda
Preheat oven to 350°. Combine bananas, sugar, vanilla extract and eggs in a large bowl and beat w/ a mixer until well blended. In another bowl, combine flour, salt, and baking soda and stir. Add flour mixture to banana mixture and beat well. Spoon batter into a 9×5 non-stick loaf pan and bake for 45 minutes, or until a wooden toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from the pan.

Update: Fantastic! Light and soft, not too sweet, not too banana-y… slightly crunchy on the inside and wonderfully soft on the inside.
I deviated ever so slightly from the instructions; for those baking with fan ovens, I suggest pre heating to about 150-155 degrees Celsius instead, and to reduce the cooking time by about 10 minutes to avoid over-cooking.
